Dalmatian cuisine is highly regarded for its nutritional values, richness of flavour and variety, where fish, shellfish, crustaceans, olive oil and green leafy vegetables, are at the forefront. One of the most famous Dalmatian dishes is the “pašticada”, known since ancient times, followed by dishes prepared under the bell peka, grilled lamb and numerous fish specialities, roasted octopus, squid, sea bream, redfish, sea bass and, of course, the traditional homemade cheese, prosciutto and olives. 

The most favourite desserts are the aromatic flan and irresistible fritters, as well as cakes made of figs, raisins and almonds. The Makarana cake is a dessert known throughout the Makarska Riviera, and it is prepared, based on a traditional recipe, for holidays, festivities and special guests. Legend says that the cake was named in 1838, when it was served to the Saxon King Friedrich August during his visit to Makarska. The honoured guest, delighted with the nameless dessert, decided to give it the name of the host city. Today, the Makarana cake is a protected cultural heritage, and its importance is proven by numerous competitions to make this delicacy.

Mediterranean spices also play a major role in preparing Dalmatian dishes; they give that final appealing note to each dish: oregano, marjoram, rosemary, basil, laurel and sage.
Dalmatia is also widely known for its high quality and award-winning wines that go perfectly with the Mediterranean cuisine and create a true spell of flavour delight!
